Of all those actresses in film / tv that portrayed kickass heroines who regularly won all their fights, which of those actresses do you think could really handle themselves in a fight without the scripting of Hollywood magic...Diana Rigg, Michael Rodriguez, Lucy Liu, Betty Paige, Scarlett Johansson, etc...

as someone who is old enough to have seen Diana Rigg when she was performing in The Avengers and James Bond movies, she would be top of my list.

I would vote for Pam Grier.  Probably the all-time Movie Catfight Queen (judging by the number of silver screen scraps) but I got the impression that she could effectively throw down in real life.

Hum, I'm an old man and I remember 2 actress in the 50s, Anna Magnani(in italian movies) and Yvonne De Carlo(in american movies), the were at that time, in my opinion, the best catfighters.

As probably the oldest guy here, I remember both actresses very well.  I don't recall Anna Magnani ever having a catfight worth viewing, and I watched a lot of her movies always hoping to see a good scrap.  Excellent actress, but her movies were super depressing.  Yvonne De Carlo had a couple of movie fights, both of which were decent -- not great just OK:  "Bucaneer's Girl" and "Scarlet Angel." 

The real catfight queen of that era (IMO) was Marie Windsor.  She fought in "Swamp Diamonds" (1956), "Frenchie" (1950) and as Belle Starr in a TV series called "Stories of the Century" (1954). She also played in two other movies that had exceptional catfights, although she was not a combatant in either movie:  "Outlaw Women" (1952) and a made-for-TV flick called "Wild Women"  (1970).  Wild Women opened with a great fight and had another one (featuring Sherry Jackson) a little later.
