I remember there were a few Celeste Star catfight videos but just cant seem to find them anymore

It was from one of the JENZ websites, not sure which one.  The other model is Andie Valentino.  Unfortunately (very unfortunately, actually) she has retired from modeling/wrestling.

Yes -- she had a competitive wrestling match against Cali Logan for DT Wrestling.

Yes, she has done several for DT wrestling/Double Trouble; and I seem to recall that she is on the APL roster too.

Oh...was she any good at it, in the DT ones?

And as a side note, are the APL videos actually competitive? My impression was they're mostly fake...

The ones I have of Celeste from DT are definitely not competitive, however they are done very well, she works well with Erika Jordan and Melissa Jacobs for scripted fights.

They have them broken into categories with competitive being one of them. The American shoots listed under competitive from the last 3-4 years probably aren't competitive save one or two. The European shoots and the US shoots before then probably are.
