The producer of the video would ultimately be held responsible.

That is why it is essential to have a model release form signed before hand.

It would be considered a job since they get paid for it, so I would imagine there would be workmans compensation that the producer has to carry if there are enough employees.

The guy that comes to fix your roof would either have his own personal insurance if he is independent, or have workmans comp. for his employees.

Nobody in their right mind is going to work for someone if they are not covered ,if they get hurt.  Not unless these companys pay out of pocket for medical expenses...
